Commercial freezers reach sub zero degrees farenheit. Most home freezers do not. That's the reason that home made ice cream often gets a crystallized texture, it doesn't freeze fast enough and some of the water in the ice cream comes out of emulsion. An excellent reason to eat all the ice cream right away.<br />Your cake looks wonderful.
